Wild Wing Cafe Chicken Bog (Catering Menu)

Main courses

1 gallon hot water
3 tablespoons chicken base
5 pounds bone-in chicken breasts (skin removed)
1 medium onion, rough chopped
1 tablespoon black pepper
2 packs of smoked sausage (14 ounces), sliced
2 quarts rice


Combine water, 2 tablespoons of the chicken base and chicken in large pot. Boil until done. Remove the chicken, cool and debone. Remeasure liquid (add water if necessary) to equal 1 gallon.

Place on stove. Add onion and boil in the water. Add 1 more tablespoon chicken base and black pepper. Add the smoked sausage. Add chopped chicken to water and bring to a rolling boil. Add rice and bring back to a rolling boil. Immediately turn off heat and cover. Do not stir. Let it sit 30 to 40 minutes and it's done!
