Salad
1/2 cup pitted Kalamata olives, sliced
6 ounces feta cheese, crumbled
3 cups arugula
3 tablespoons Lemon and Mint Greek Dressing (recipe follows)
Toss all ingredients together.
Lemon and Mint Greek
Dressing
Juice and zest from two lemons
1 garlic clove, grated
1 teaspoon sugar
1/4 teaspoon honey
4 mint leaves, finely chopped
1/2 teaspoon Greek oregano
1/2 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
1/3 cup extra virgin olive oil
Place all ingredients (other than oil) into a small mason jar and shake vigorously for 15 to 30 seconds, add oil and shake an additional 15 to 30 seconds.
