1 1/4 teaspoon lamb gourmet seasoning by Naturiffic (or kosher salt)
1 teaspoon ground black pepper
1 1/4 teaspoon shawarma spice
1 1/4 pounds freshly ground beef chuck (20 percent fat)
1 pound freshly ground lamb shoulder meat
8 yeast rolls
3 1/2 cups Greek Arugula Salad, dressed in Lemon Mint Greek dressing
Place all seasonings in a bowl and whisk to combine. Sprinkle meat with half the seasoning and mix just well enough to combine the two types of meat and the seasonings (do not over mix). Divide meat into 8 equal portions and from into patties.
Sprinkle each with seasoning on both sides. Grill for 6 minutes, flipping after 3 minutes. Toast yeast rolls on grill.
To assemble burgers, place a patty onto each roll bottom, top with a generous portion of arugula salad, top with top half of roll.
