Chocolate Peppermint Waffles Recipe From Johnny D's

Ingredients: 

14 tablespoons unsalted butter
1 1/2 cups all-purpose flour
2/3 cup cocoa powder
1/3 cup sugar
5 tablespoons corn starch
1 tablespoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups buttermilk
3 large eggs
1 1/4 teaspoons vanilla extract
1/8 teaspoon peppermint extract
Non-stick spray
Peppermint chips, chopped (or Junior Mints minis)

Toppings, as desired:

Chocolate sauce
White chocolate sauce
Softened butter
Powdered sugar
Fresh berries
Pure maple syrup

Directions: 

Melt butter in the microwave until melted but not hot, approximately 45 to 60 seconds. Set aside.

In a small bowl, mix all dry ingredients together until blended. Add the buttermilk, eggs and extracts and whisk until almost smooth (a few lumps is fine). Be sure to scrape the bottom and incorporate all the dry into the wet ingredients.

Allow to rest in the refrigerator for about 20 to 30 minutes.

Meanwhile, heat the waffle iron to 375 degrees and spray with a little non-stick spray if needed. Once the iron is hot, add the waffle mix to the waffle iron and sprinkle in the peppermint chips. Allow to cook until the waffle iron beeps or until the waffle is cooked through and slightly crispy on the outside.

Carefully remove from the iron, plate and, as desired, dust with powdered sugar, drizzle with chocolate sauce, and/or top with softened butter, mixed berries or maple syrup.
