Pamper your guests with a regal cocktail that has stood the test of time

Champagne keeps wonderful company. Not only is it part of most festive occasions, but Champagne’s history is closely intertwined with royalty, as well. The French king, Louis XIV, is reported to have once sent a herald across enemy lines with the plea, “His Majesty is out of wine. He begs you to give me safe conduct through your lines so I might fetch Champagne for the royal table.” Not surprisingly—a Champagne-lover, himself—the enemy commander agreed.

The Champagne cocktail provides a regal beginning to any holiday evening:

  • 1 glass dry Champagne
  • 1 teaspoon Cognac
  • 1 sugar cube
  • Angostura bitters
  • A half-slice or wedge of orange

Master sommelier Brian Julyan suggests when making these for many guests, set out Champagne flutes, each containing an Angostura-soaked sugar cube and a wedge of orange. Half-fill the glasses with Champagne shortly before guests arrive. Then add cold Champagne and top with a teaspoon of Cognac before serving, to begin an evening fit
for royalty!
